Morava is a butcher's shop located in Belgrade that has been a place where high-quality cuts of all kinds of meat are bought for more than forty years. A well-coordinated, professional, and blithesome team selects and prepares orders for their fellow citizens every day and unselfishly shares their knowledge and enviable gastronomic experience with them. The beginning of Morava Butcher's shop dates back to 1984 when Dragan Mijajlović opened a small family craft shop at the Palilula market with the goal to offer his neighbors the freshest meat and meat products of the highest quality. Citizens of Belgrade had very quickly recognized Dragan's efforts, which they selflessly rewarded with their loyalty. Morava Butcher's shop has become a very recognizable brand, to which all connoisseurs and lovers of a good bite regularly return. The famous Morava kebabs, which have been produced for decades according to an unaltered recipe, followed by burgers, steak, sweetbread, hocks, as well as authentic steak tartare, have become an integral part not only of the meals of our fellow citizens but also of the menus of renowned restaurants and hotels throughout Serbia, which successfully positioned Morava in the HoReCa business segment. Although it originally represents a kind of "institution" of Palilula, due to great interest, in 2020, the Morava Butcher's shop opened its retail facility in Zemun. However, perhaps the greatest novelty is the opening of Morava Butcher's Shop Meat Concept Store bars, unique catering establishments specializing in the preparation of high-class meat selection in two locations: "Palilula market" and "Mercator center Belgrade".
The Morava Butcher's shop is one of the first butcher's shops in Serbia to include top cuts of meat of exceptional taste and texture in its standard offer, created by the process of dry aging in strictly controlled conditions. In its production facilities, Morava Butcher's shop has chambers of large capacity for dry aging in which selected cuts of beef are kept for at least 45 days, which altogether makes Morava's "Dry-aged" offer uniform and constant. Today, the popular “Dry Aged” program of the Morava Butcher's shop contains several types of specially processed steaks of top quality such as “Ribeye”, “T-bone”, “Tomahawk”, steak, and rump steak, which have quickly become very popular and appreciated, both among citizens and the professional public and well-known caterers throughout Serbia.
In the process of dry aging, Morava Butcher's shop uses only the highest quality cuts of meat originating from ANGUS cattle. It is an authentic breed of cattle whose meat is characterized by a conspicuous marbleness, noble taste, and unique texture, which are the characteristics that make ANGUS beef steaks particularly appreciated. The ANGUS cattle breed originally comes from Scotland and is a very resistant breed that spends most of the year in the pastures feeding on fresh grass. One of the characteristics of ANGUS cattle is that this breed feeds on fresh grass on pastures, which contributes to the quality and high nutritional values of meat. The premium cuts of ANGUS beef offered by Morava Butcher's shop come from beef grown EXCLUSIVELY on the pastures of Serbia.
In line with world trends, Morava Butcher's shop opened the first Belgrade Meat Concept Store at the end of 2021 at the Palilula market, an authentic catering facility specialized for enjoying the premium selection of meat prepared by top chefs, which is perfectly paired with one of the many exceptional wines from the enviable selection of the Meat Concept Store. Some of the favorite specialties from the menu of Morava Meat Concept Store are certainly dry-aged rump steak, as well as “Ribeye” and “T-bone” steaks, and there are authentic specialties such as the beef diaphragm and beef bones special that have, during the previous year, delighted many fans of gastronomic specialties who regularly return to them. We should not forget the famous Morava kebabs, which have been produced for more than 30 years according to the unchanged recipe, and there are burgers, rack of lamb, pork chop, and other specialties made of cuts of meat of the highest quality from the Morava Butcher's shop. Due to the great interest, as well as the desire to bring the authentic offer of the Meat Concept Store closer to fellow citizens on the left bank of the Danube, the Morava Butcher's shop opens its second catering facility at the end of 2022, this time within the Mercator Center Belgrade in New Belgrade municipality.
